Coconut Lime & Cilantro Paletas

This recipe is bound to create some controversy. Cilantro is one of those herbs that has two very distinct camps: the lovers and the haters. When my husband told his colleagues that we were making coconut lime and cilantro popsicles, their response was: “why would you do that?” They are clearly in the haters camp. Well this recipe is for the lovers, and I know there are many of them out there, including my sweet friend Desiree who inspired and helped develop this recipe.

I have been shooting photos for my talented and very hard working friend Desiree’s blog. When she first asked if I would take on the photography for the recipes, of course I wanted to help. In the back of my mind I also knew that this was a way for me to ensure some much needed time with this very busy, food loving friend of mine. Our days together are days filled with cooking, shooting, chatting and eating. This last time we decided it would be fun to develop a recipe together that we would both share on our websites. This is the first of what we hope will be a series of collaborations.

We have been hitting record temperatures for June. It is hard to believe that it isn’t even officially summer yet. This seemed a perfect time to share this recipe. These paletas are a perfectly refreshing sweet-tart treat. Although it looks like we are in for some rain and cooler temperatures again, popsicles are always a good idea and the sun and warmth will be sure to return soon.

I had my first couple of dips in the ocean on the weekend and can’t wait for more summery days of swimming and paletas.

Coconut Lime & Cilantro Paletas

Prep time:  15 mins

Cook time:  4 hours

Total time:  4 hours 15 mins

Serves: 6-8 popsicles

These popsicles are on the tart side, which makes them super refreshing for summer. Feel free to add more of the simple syrup to the lime and cilantro mixture if you like things on the sweeter side.


Simple Syrup– makes ½ cup

  • ¼ cup honey, light flavoured, such as clover or wildflower
  • ¼ cup water


  • 400 ml light coconut milk
  • 2 Tbsp sugar
  • ½ tsp lime zest (zest of 1 medium lime)
  • ½ cup lime juice
  • ¼ cup lightly packed cilantro
  • ¼ cup simple syrup


  1. Place the honey and water in a small pot. Over medium heat, bring the mixture to a simmer and stir until the honey is dissolved. Remove the mixture from the heat and cool to room temperature.
  2. In a blender, combine the coconut milk and sugar and blend until combined. Pour into a liquid measuring cup, stir in the lime zest and set aside. Rinse the blender and add the lime juice, cilantro and ¼ cup of the cooled simple syrup. Blend until smooth. Taste and add more simple syrup if you like your popsicles sweeter.
  3. To assemble the popsicles: start with the coconut milk mixture and fill molds ⅓ full. Freeze for about an hour, or until lightly set. Add a layer of the cilantro lime mixture and freeze again for about an hour. Finally add the remaining layer of the coconut milk mixture. Using a wooden skewer or chopstick, swirl the layers together. Freeze for 4 hours or overnight.
